FINAL IPA PROJECT DAY THE BEST EVER AS STAFF EARNS KUDOS;
HOPS PROJECT 2009 HOPS AND RELEASE DATES ANNOUNCED


Sly Fox's five year IPA Project went out with a bang on Friday, December 12, as the final IPA Project Day was the largest and most successful celebration to date. Praise from attendees, both during the day and later at online beer sites, was almost unanimously favorable with several people pointing out the extraordinary performance of the bar and wait staff in particular for successfully meeting the needs of the steady stream of beer lovers who filled Sly Fox Phoenixville all day and night.

As previously revealed in the November issue of the Sly Fox Newsletter, the IPA Project will be supplanted by the more generically named Hops Project in 2009 and the monthly single-hop beers will be Pale Ales.


"Since 2004, we have brewed 48 single hop IPAs, using 37 different hops. And even though there are new hop varieties to try, the hops we had used started to blend together for me and I wanted to try these varieties in a more social, drinkable and subtle beer. This is the next step in our hop experimentation," said brewmaster Brian O'Reilly about the change, while director of brewery operations Tim Ohst added that "we're excited about the new challenge, and we've contracted for nine new hops varieties for 2009, including some very rare ones from Argentina and Poland."

A handout sheet was available to attendees on December 12 naming the 11 varietals to be used January through November for the initial year of Pale Ales. The list is as follows, along with a release date for each beer:

1/9 - Boadicea
2/13 - Crystal
3/13 - Sovereign
4/10 - Liberty
5/8 - Marynka
6/12 - Willamette
7/10 - Whitbread Golding Variety
8/14 - Palisade
9/11 - Argentine Cascade
10/9 - US Saaz (or alternative)
11/13 - East Kent (or alternative)
12/11 - Odyssey/Hop Project Day.

The IPA Project Day Celebration on the second Friday in December (December 11, 2009) will feature the varietal Pale Ales on tap and, as usual, the release of Odyssey Imperial IPA, brewed with all those hops. Cask versions of Odyssey 2008 and 2009 and Rt. 113 IPA will also be available that day.
